The Day After Today

Like me, most of you are about to eat the feast of the month – Thanksgiving dinner.

Turkey, dressing, macaroni and cheese, cranberry sauce, cornbread, collard greens, green beans, mashed potatoes, sweet potato pie, pumpkin pie, pound cake…….whew, let me stop now, I am making myself hungry 🙂 and we aren’t eating til 6p.

Anywho…….some people have food left over, we don’t but I hear it happens. In any case, there are only so many turkey sandwiches you can eat. So what else can you do? Well, the team over at Amana shared these recipes, and now I am sharing them with you.

Turkey Stock
1 turkey carcass                                                 1 yellow onion diced
3 carrots diced                                                  3 stalks of celery diced
1 head of garlic cut in half                               3 bay leafs
10 pepper corns                                                5 sprigs of thyme
Put the turkey carcass in to a large stock pot with all the vegetables, spices and herbs. Bring to a
boil reduce to a simmer and simmer for 1 hour. Turn off the heat and let the turkey stock steep
for another hour. After the hour of steeping strain all the bones and vegetables and throw
away.

Turkey Noodle Soup
4 tablespoons of butter                                    1 large diced onion
3 carrots diced                                                   2 stalks of celery diced
4 cloves of garlic crushed and chopped       4 cups of picked turkey meat
1/4 cup of flour                                                  3 quarts turkey stock
1/4 cup of chopped parsley                              salt and pepper
Cooked Noodles
Melt the butter in a large stock pot on medium heat and cook all the vegetables until tender,
about 6 minutes. Season as you go. Add the picked turkey and the flour and stir until
incorporated. Add the turkey stock stirring while you pour it in. Bring to a simmer, adjust the
seasoning with salt and pepper and add the chopped parsley.
Cook your favorite noodle separately until tender. Don’t mix the noodle into the soup or they
will get mushy. Pour the turkey soup over the noodles in your bowl.
